"Processing information electronically" means any digital device that comes in contact with personal information.
Example
From your website and email to your mobile phone and contact list, all of this counts as electronic processing. Perhaps you use spreadsheets or an HR software to manage your employee's information or payroll. If any personal information is stored on or shared via a digital device, then you are processing information electronically.
